Ellie May has chastised me for not documenting my home made corned beef. My feelings were that it just wasn't that interesting. I wasn't sure it belonged in the Spork Hall of Cured Meats.
But I will assure you: it was awesome. If nothing else, next time the urge hits you, do not, I repeat: do not go buy one of those sad cryovac pre-packaged thingies. No, just do it your damn self. Sure, it takes 5 days, but there is almost no effort involved whatsoever.
If you really need documentation, just think pastrami... then simmer it instead of smoking it.
